YUMMY
This is the real deal stuff. No almond milk "cheese" found here. This is made with real dairy, and none of the lactose.

About the Recipe
Don't you hate it when recipes start with someone's entire life story... yeah me too. I'm never gonna do that. If you need help finding lactose free ingredients, please take a look at the database tab.
Ingredients
½ lb of elbow noodles
5 Tbsp lactose free butter
2 Tbsp flour
3 cloves minced garlic
1 Cup lactose free whole milk
1 ¼ Cup shredded lactose free monterey jack
1 ¼ Cup shredded lactose free cheddar
1/2 Cup shredded lactose free mozzarella
1 Tbsp lactose free cream cheese
½ Tsp smoked paprika
1 Tsp kosher sea salt
½ Cup bread crumbs
Preparation
Start by boiling a pot of water and cooking half a box of elbow noodles according to the directions on the box. Once the noodles are done cooking, strain them, and add them back to the pot with 2 Tbsp of butter and stir (do not heat the pot for this part).
Then heat a separate pan and melt 3 Tbsp of butter. Once melted, add the minced garlic and flour and stir until well combined. Then add the whole milk and simmer over medium low for about 8 minutes, or until the mix starts to thicken. Then, slowly add in 1 cup of monterey jack, 1 cup of cheddar, and ½ cup of mozzarella while stirring to ensure the cheese is fully melted before adding more. Then add the cream cheese, smoked paprika, and salt. This cheese sauce is ready to be added to our cooked noodles.
Add most of the cheese sauce, and stir until well combined. Then scoop the mac and cheese into an oven safe baking dish, and pour the remaining cheese sauce over the top (doing this helps to keep the mac and cheese from drying out in the oven. Then sprinkle over ¼ of a cup of bread crumbs, then ¼ cup of cheddar and ¼ cup of monterey jack, and then the remaining ¼ cup of bread crumbs. Place the mac and cheese into the oven on broil until the top gets a nice golden brown. This takes about 6 minutes in my oven, but use your best judgment. After this, the mac and cheese is ready to be served!
